tajarin
TAJARIN
"Tajarin" are fresh egg noodles from Piedmont originally from the area between Langhe, Roero and Monferrato. They have a thin noodles’ shape: pasta is rolled to get a thin puff and then it is sliced to create "tajarin" thin as hair.
You can taste “tajarin” with a variety of sauces: with gravy and game, mushroom sauce, season’s vegetables or enriched with butter and white truffles from Alba.
Wine:
Dolcetto d'Alba or Barbera d'Asti, depending on the chosen sauce
