	`INSALATA RUSSA`

	Famous and tasty starter, it originally belonged to Russian’s tradition from which it takes its name; then in 1700 it became one of the main dishes in Ligurian aristocracy gala dinners. When Liguria was under the dominion of Piedmont the Insalata Russa was immediately welcomed and then it taked across Italy, where each region has developed its own version to suit the local products over time. In our version the main ingredient are boiled vegetables from our kitchen garden, boiled eggs, tuna and mayonnaise to bind it all.
