Dumplings are one of the most popular Italian dishes in the world: they are simple, hearty and adaptable to any sauce. It is a plate of ancient origin, in some areas of Italy potatoes are substituted with other flours, but in Piedmont the classic recipe is made with potatoes.
The dough is made from potatoes, flour and eggs, it is spread out like a breadsticks, sliced by hand and passed on fork to give the singular form suited to collect the gravy. Dumplings are great served with sausages sauce or with Castelmagno cheese but also simply with tomatoes and basil.
