CONIGLIO CON I PEPERONI
This is another Piedmontese speciality in which we find the rabbit, animal appreciated since ancient times, thanks to the great fertility and ease of rearing. The rabbit is combined with peppers, which are not only the contour but they accompany the meat during cooking.
We use another Piedmont’s excellence, the peppers of Cuneo, that, thanks to the thickness, keep a good texture after cooking. The dish looks pleasing to eyes thanks to colours given by peppers and it has a very delicate flavour.
