It is a recipe from the tradition and it is obtained by marinating foods with vinegar to preserve and flavoured them.
Even today this technique is adopted to marinating chicken, zucchini, fried eggs, eels: they are cooked and immersed in a "bagna" (the dialect of marinating liquid) made from vinegar, white wine, sage and other natural flavours. So foods are tasty and pleasantly cool to eat during the summer.
