CARNE CRUDA ALL'ALBESE
It is another specialty of Piedmont, in particular the Albese area, from which it takes its name. Here, where simplicity, essentiality and the highest quality of raw materials are exasperated, the raw meat is carefully selected by us, so we use only Fassone veal thigh beaten with a knife.
Fresh starter that enhances raw meat’s taste, seasoned only with olive oil, salt, pepper, lemon and grated Parmesan cheese.
When the season is favorable you can reach the maximum "pleasure" replacing grated Parmesan cheese whit Alba truffles.
